It is hard to believe that I have almost reached my one year of working from home full-time, time really does go fast when you are having fun. Over the months of working from home I have established a pretty nice schedule but one thing I was missing was my daily coffee from the break room at work. Now, let me be clear, that coffee was nothing to write home about, it was FREE but what I loved about my coffee at work was trying new flavors ofInternational Delight® coffee creamer that my coworkers and I would buy and share with each other.
A few months into my working at home I decided that I can still have that fun by buying a variety of coffee creamers to enjoy in the morning. I always reach forInternational Delight® when I am shopping for creamer. It is hard to say if I have a favorite flavor but I can say that I LOVE thatInternational Delight® offers so many delicious options. YUM!

One flavor that I really love picking up for my morning coffee isInternational Delight® Almond JoyTMCreamer. Almond Joy is one of my favorite candy bars so why not enjoy it in my coffee? SWEET! Now that I am at home for my breakfast time rather than eating at my desk I really have enjoyed making fresh pastries and muffins for our breakfast. I decided to get a bit creative and make an Almond Joy™ inspired breakfast muffin using theInternational Delight® Almond JoyTMCreamer. This recipe was a bit of an experiment but I am so happy I tried it, these muffins turned out amazing!

Ingredients:
2 cups flour
3/4 cup sugar
1 TBSP baking powder
1 tsp salt
2 eggs
1/4 cup oil
1/4 cup butter, melted
1 cupInternational Delight® Almond JoyTMCreamer
3/4 cup shredded coconut
1 cup chocolate chips
1/4 cup sliced almonds
Directions:
1. Preheat oven to 350 degrees. Prepare muffin tin by placing cupcake liners in the tin.
2. Carefully combine all dry ingredients except for coconut, chocolate chips and almonds in a large mixing bowl.
3. Add eggs, oil, butter, andInternational Delight® Almond JoyTMCreamer to the mixing bowl. Mix until all ingredients are combined.
***Coffee creamer tip – you can use your favorite coffee creamer in place of milk in any of your bread, pastry or muffin recipes. Seriously, start getting creative!
4. Fold in coconut and chocolate chips.
5. Fill muffin tin and sprinkle some coconut and sliced almonds on each muffin.
6. Bake muffins at 350 degrees for 25-27 minutes.
7. Once baked, let muffins cool and enjoy!
Looks delicious right? I don’t know about you but our family LOVES Almond Joy™ so when I showed these to the kids they immediately asked for breakfast!
