Chicken can be a great option for dinner because it’s inexpensive and can be used in so many ways. But chicken breast can be bland and dry. That’s where marinades come in. They add both flavor and moisture to chicken breast.

Each of the recipes are made with pantry staples and take just minutes to stir together. Also, all of the marinades freeze well, so they’re also an easy way to get a jump on dinner.

Can you marinate chicken?

You can! Chicken marinades are a great way to add moisture and flavor to chicken.

Should you marinate chicken?

You should! Chicken doesn’t have much flavor on its own. Marinades are an easy way to change up plain chicken and add lots of flavor.

How to make brown sugar bourbon chicken marinade

Step 1: To make the brown sugar bourbon marinade, whisk the orange juice, bourbon, soy sauce, brown sugar, garlic, ginger, and onion together until combined.

Tip>>This chicken marinade isn’t spicy. If you want more heat, add additional chile powder to taste.

How to make mustard herb chicken marinade

This marinade is surprisingly balanced and doesn’t have a strong mustard flavor. My kids don’t like mustard, but they love this marinade.

Step 1: Add the mustard, red wine vinegar, lemon juice, honey, olive oil, oregano, thyme, rosemary, garlic, salt, and pepper to a medium bowl. Whisk everything together until combined.

How long can chicken marinate in the fridge?

Chicken in marinade is safe to store in the fridge for up to two days.

Can I freeze chicken in marinade?

You can! Freezing chicken in marinade is a great way to get a jump on dinner prep.

What if the chicken is already frozen?

If the chicken is already frozen, don’t thaw before use. Simply add the frozen chicken to the bag and pour in marinade. Then, freeze.

What type of container should I store marinating chicken in?

Meat should be marinated in a non-reactive, covered container: resealable plastic or silicone bags, glass, stainless steel, and plastic containers all work well.

Avoid using aluminum dishes to marinate meat because the aluminum can react with acids in the marinade.

What types of containers can I use to freeze marinating chicken in?

The three types of containers that I’ve found work best for freezing chicken in marinade are glass containers, resealable silicone bags, and resealable plastic bags (freezer bags).

  • Glass containers
    • PROS: Reusable, glass doesn’t absorb odors or germs
    • CONS: Takes up lots of space in the freezer, expensive, fragile
  • Resealable silicone bags
    • PROS: Reusable, can lay flat in the freezer (take up less space)
    • CONS: Expensive, can be difficult to find large bags
  • Resealable plastic bags (freezer bags)
    • PROS: Inexpensive, can lay flat in the freezer
    • CONS: Not reusable, can break or tear

How to thaw frozen chicken in marinade

Move the container from the freezer to the fridge about 24 hours before you plan to cook and serve it. This should allow sufficient time for the chicken and sauce to thaw.

7 Chicken Marinade Recipes

Ingredients

Brown Sugar Bourbon

  • 1 cup fresh orange juice1
  • 1/2 cup brown sugar packed
  • 1/4 cup bourbon2
  • 1/4 cup lite soy sauce
  • 3 cloves garlic minced
  • 1 tablespoon minced onion3
  • 1 teaspoon grated fresh ginger

Tequila Lime

  • 1/2 cup bottled margarita mix
  • 1/4 cup tequila4
  • 1/4 cup fresh lime juice
  • 1 teaspoon ancho chile powder5
  • 1/2 teaspoon kosher salt6
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic minced

Caesar

  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon kosher salt7
  • 1/2 teaspoon ground black pepper
  • 3 cloves garlic minced

Mustard Herb

  • 1/4 cup prepared mustard8
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary crushed
  • 4 cloves garlic minced
  • 1/2 teaspoon kosher salt9
  • 1/2 teaspoon ground black pepper

Teriyaki

  • 1/2 cup lite soy sauce
  • 1/2 cup brown sugar packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger

Margarita

  • 1 cup bottled margarita mix
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt10

Everyday

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons lite soy sauce
  • 2 tablespoons Worcestershire sauce
  • 6 tablespoons brown sugar packed
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon kosher salt11
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic minced

1-1.5 pounds of chicken

    Instructions

    Marinade

    • Choose one of the marinades.

    • Stir together the ingredients for that marinade.

    • Add chicken and marinade to desired container.

    • Let chicken sit in marinade, covered in the fridge, for at least 30 minutes and up to 2 days.

    Grill

    • Preheat grill to medium high heat and lightly grease the grates.

    • Remove the chicken from the marinade, and let the excess marinade drip off.

    • Discard remaining marinade.

    • Grill chicken until chicken reaches 165F. The grilling time will vary depending on thickness of the chicken.

    • Remove chicken from grill, and tent loosely with foil.

    • Let the chicken rest for 5-10 minutes before serving.

    Oven

    • Preheat oven to 425 F.

    • Add the chicken and marinade to a baking dish. An 11×7-inch dish works well for 1-1.5 pounds of chicken.

    • Bake for 10 minutes.

    • Flip the chicken over, and continue to cook for an additional 15-20 minutes, or until the chicken registers 165F.

    • Let the chicken rest for 10 minutes before serving.

    Slow Cooker

    • Add the chicken and marinade to the slow cooker insert.

    • Cover and cook on LOW for 3-5 hours, or until chicken registers 165 F.12

    Notes

    1. Can use a good-quality premade OJ if can’t use fresh orange juice.
    2. Or an equal amount of apple juice
    3. Dried or fresh
    4. White or gold
    5. Ancho or plain chile powder ok
    6. Or 1/4 teaspoon table salt
    7. Or 1/4 teaspoon table salt
    8. Regular yellow mustard works well
    9. Or 1/4 teaspoon table salt

    12. I recommend doubling the amount of marinade and chicken if cooking in a slow cooker. Also, the recipes with alcohol (tequila lime and bourbon brown sugar) aren’t recommended for the slow cooker.
