Rainier Cherry Muffins or Rainier Cherry Cobbler Recipe are two great additions to your recipe box for delicious muffins and cobbler desserts in season.

Other than making a good old-fashioned cherry-berry southern style buttery-crusted cobbler, these two recipes are perfect for cherry lovers!

Not around long, so every year when I see them I snatch them up in a hurry.

They freeze well in storage bags too!

If you haven't heard about these types of cherries and are a fan of sweet cherries your truly missing out on the best kind, rainier cherries.

A few years back a friend told me about these and said, she had tried these and never looked back at any other kind.

Always guaranteed sweet, firm, and absolutely delicious flavor cherries. A bit pricey but worth every penny.

If you're not a big cobbler fan, then just make muffins but these are the best eating cherries also on the planet!

The Rainier Cherry is the sweetest of all the sweet cherries.

With its characteristic cream-colored flesh, Rainier Cherry farmers will not pick them until the sugar Brix (a measure of how sweet the cherry is) and they are so worth the extra money.

Even though these cherries are a bit pricey, once you try them you will see what I mean!

Just remember fresh fruits like these can be added to any of your favorite summer fruit recipes..

  • butter

Rainier Cherry Muffins or Rainier Cherry Cobbler Recipe

Rainier cherries are the sweetest fruit among the cherry family. It's actually hard to use them in baking without eating the whole bowl of them in season. If you happened to have some on hand here are two recipes to try for cobbler and muffins that are both outstanding!

Ingredients

  • Cobbler Ingredients:
  • 6 cups cherries stemmed and pitted
  • 1 1/2 tablespoons lemon juice
  • 2 teaspoons cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • Topping:
  • 1 1/4 cups flour or yellow cake mix (just the mix!)
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 6 tablespoon chilled butter
  • 1 teaspoon cinnamon
  • Mix and set aside.
  • Muffin Ingredients:
  • 1/2 cup softened butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 2 cups cherries, pitted
  • Garnish Ideas: thin icing, powdered sugar dusting or leave plain

Instructions

  1. Directions for Cobbler
  2. Preheat oven to 425 degrees.
  3. Clean cherries and remove pits.
  4. In a large bowl mix together, the cherries, lemon juice, cornstarch, brown sugar, white sugar, vanilla, and cinnamon.
  5. Add to a 2-quart baking dish.
  6. Sprinkle the top with crumb topping.
  7. Bake at 425 for 25 to 30 minutes until browned.
  8. Muffin Instructions
  9. Preheat the oven to 375 degrees.
  10. Prepare a 12 cup muffin tin with liners or grease.
  11. In a large mixing bowl cream sugar and butter.
  12. Add all dry ingredients with alternating milk to this mixture.
  13. Fold in the cherries.
  14. Add to a prepared muffin tin.
  15. Bake at 375 degrees for around 30 to 35 minutes.
  16. Cool, dust with powdered sugar, drizzle with a thin frosting or leave plain.
