March’s Recipe of the Month

March’s Recipe of the Month is my incredible Healthier Carrot Cake Banana Bread with Cinnamon Cream Cheese Frosting. This beautiful bread is perfectly sweet and makes a wonderful brunch treat for spring and Easter.

This bread is easy to make and customize. I’ve noted some great ways to make it your own, but be sure to read through the recipe blog postitself to get all of the deets:!

  • DIY quick oats. If you don’t have quick oats, simply place 1/2 cup old fashioned rolled oats in a blender and pulse for 20-30 seconds until the oats break down a bit.
  • Swap your sweetener. You can use 1/3 cup honey or pure maple syrup in place of the coconut sugar if you’d like.
  • Keep it refined sugar free. Feel free to try using my paleo powdered sugar in the frosting!
  • Add your favorite mix-ins. Shredded coconut flakes, raisins, pecans instead of walnuts, or pineapple would all be delicious.
  • Make muffins. Turn this recipe into carrot cake banana muffins or cupcakes by following the recipe, adding the batter to a well-greased muffin tin and baking around 15-20 minutes.

Here’s how the Recipe of the Month works

  1. The recipe: on the first Wednesday of each month we’ll share a new or reader-favorite Ambitious Kitchen recipe to make that month. You have the entire month to make the recipe!
  2. The giveaway: When you make the recipe (anytime during the month!) you have two different ways to enter to win the $100 Target gift card. We’ll randomly select a winner at the end of the month. See below for the two ways to share! Must be 18 years or older, USA & Canada only.

When you make the recipe, there are two different ways to share your creation with us to enter to win the $100 Target gift card (18 years or older, U.S. & Canada only):

1. On the blog: leave a comment and rate the recipe here with the hashtag #AKRecipeoftheMonth, plus your name and email (so we know you made it!) Scroll all the way past the recipe itself in the blog to where it says “Leave a comment & a rating.” Boom!

2. On social media: Share a photo of your recipe creation on social via Instagram (stories or in-feed), TikTok, or in our Facebook Group by tagging @ambitiouskitchen and adding the hashtag #AKRecipeoftheMonth. *Please note for Instagram your profile must be public so that we can see your posts.
